Protein Packed Pancakes

What goes in:

1 scoop vegan protein powder (vanilla or chocolate depending on your mood)

1/2 cup of oats (blitz in a blender to make flour)

250 ml oat milk (or any plant-based milk alternative)

100 ml water

1 egg

1 tsp coconut oil

1 pot of coconut yogurt (we used Coyo Salted Caramel!)

1 banana

2 tbsp honey (or to taste)

1 pack of Ape Snacks Salted Chocolate Coconut Curls

A sprinkle of dark chocolate squares (if you're feeling a bit naughty!)

The (insanely easy) Process:

In a bowl, mix the oats, protein powder, egg, oat milk and water until smooth. Chop up the banana into small discs and place to one side. 

Heat the coconut oil in a pan and, once hot, pour in a pancake-sized dollop of the mixture. Smooth out with a spatula and wait until bubbles start to appear on the top before you flip it. 

Once you've made your perfect stack of pancakes, top with the sliced banana and drizzle with honey. For the finisher, sprinkle with our scrumptious Salted Chocolate Coconut Curls.
