APE SNACKS CHIA COCONUT BITES – topping
1/4 Blueberries fresh or frozen (optional) – blended
1 tsp Vanilla extract
250ml Coconut milk (coconut cream if you want it extra creamy)
Pinch of cinnamon
2-3 tbsp Maple syrup, to taste.
1/3 cup Chia seeds
2-3 tbsp COYO (Morello Cherry)
Additional berries for toppings, as desired
1-2 sealable jars/containers
- In a large container, mix the blueberries, vanilla extract, coconut milk, cinnamon and Maple syrup. Add Chia seeds. Mix well and let sit for 5 minutes.
- Stir again to break up any clumps and pour into your chosen containers.
- Cover and place in the fridge for an hour or until your mix has jelled together. Think of jelly and its consistency, that’s what you want.
- Layer up with some tasty Coyo, we used Morello Cherry. Add some delicious CHIA COCONUT BITES for some crunch and top with some more berries of your choice.
If you aren’t a fan of coconut milk, it can be substituted for any type of milk alternative such as almond, cashew or even oat milk.
